On the Shelf: Diabetes & Heart Healthy Cookbook

Healthcare has been a hot-button topic lately. No matter where you stand on the issue, it’s likely you’ve been thinking about it a lot, and, if you’re like me, I imagine you’ve also become more aware of the importance of maintaining a healthy lifestyle with diet and exercise.

My thoughts on exercise are better left for another time – in the far distant future! I enjoy long, leisurely walks, but not nearly as much as I enjoy a good meal, especially one I’ve prepared myself. Unfortunately, my favorite recipes all seemed to include butter-and-cream-and-cheese sauces that are anything but healthy. Then I happened upon the Diabetes & Heart Healthy Cookbook.
With more than 160 simple recipes – snacks to desserts – this slim volume has something for everyone, meat lover to vegetarian. Some of my favorites include Chicken and Noodles with Alfredo-Style Sauce (yes, sauce – rich and delicious!); Mushroom-Smothered Cube Steak (more sauce!); spicy Tex-Mex Chili Bowl; and Lentils with Brown Rice and Mushrooms. Need a little something sweet to top off a meal? How about Devil’s Food Cupcakes with Cream Cheese Frosting?
Each recipe includes portion size (generous) and dietary information – carbohydrate exchanges, fat, calories, cholesterol, sodium and protein.  We’re talking seriously good food that’s also seriously good for you.
