Congratulations to all the wonderful ladies that participated in the cake decorating class last week. We all had a great time and some beautifully decorated cupcakes were the result. Some of you asked me for the frosting recipe that I used in the class. I'm glad to share it with you. This is a good recipe to crumb coat and frost your cake. Remember to always sift your powdered sugar at least once before you mix it with the other ingredients.
Karen's Cake Frosting
1/2 cup + 2 TB shortening (I use Crisco), 2TB butter, 1/3 cup milk (whole milk will make your frosting creamier), 4 cups powdered sugar. 1 tsp vanilla flavoring, 1/2 tsp almond flavoring, 1/4 tsp lemon flavoring. You can tweak the flavorings to get the flavor you like. I also use 1 TB meringue powder to give the frosting more crust.
Cream shortening and butter together. Add flavorings and milk. Gradually add sugar mixed with meringue powder. Beat on low speed till creamy and smooth.
This recipe will make about 3 cups of frosting. Double everything to cover an eight inch round cake.
A 2 lb. bag of powdered sugar is 8 cups. Just FYI
