Save the Turkeys!!! Did you know that they pardon a turkey every year at the White House

Have you thought about skipping the turkey this year? There is no better time to give veganism a try than in November for World Vegan Month! Activists draw attention to the negative effects of the meat industry on the environment and the health benefits of a vegan diet.

Don’t want to miss out on that delicious stuffing and other fall flavors? Today I would like to introduce you to a recipe for a “vegducken.” Originally meant as a vegetarian or vegan response to the “turducken,” a Frankenstein-esque monstrosity of meat, the “vegducken” is a vegetarian or vegan dish starring a butternut squash, eggplant, and zucchini, and filled with stuffing!

This recipe is best for intermediate level cooks. Cutting a butternut squash is no joke! If you have tricks for how to make cutting a squash easier, I’d love to hear them in the comments.

If you aren’t crazy about this recipe, consider trying some of our other vegan recipe books, listed below!
This recipe is adapted from this Epicurious recipe to be vegan.  Did you know that you can read magazines, including cooking magazines, on our website? Use the Flipster database and log in using your library card number!
