Have you thought about skipping the turkey this year? There is no better time to give veganism a try than in November for World Vegan Month! Activists draw attention to the negative effects of the meat industry on the environment and the health benefits of a vegan diet.
Don’t want to miss out on that delicious stuffing and other fall flavors? Today I would like to introduce you to a recipe for a “vegducken.” Originally meant as a vegetarian or vegan response to the “turducken,” a Frankenstein-esque monstrosity of meat, the “vegducken” is a vegetarian or vegan dish starring a butternut squash, eggplant, and zucchini, and filled with stuffing!
This recipe is best for intermediate level cooks. Cutting a butternut squash is no joke! If you have tricks for how to make cutting a squash easier, I’d love to hear them in the comments.
